Pickled Red Onions
This easy pickled red onions recipe is naturally sweetened with maple syrup—no refined sugar! Perfect for tacos, bowls, and more. Ready in just an hour.
Ingredients
1 medium to large red onion, thinly sliced
1/2 cup water
1/2 cup apple cider vinegar
2 tablespoons pure maple syrup
1 teaspoon sea salt
Instructions
1. Slice the onion thin.
2. Pack the onion into a glass jar—press it down a little.
3. In a small pot, heat the water, apple cider vinegar, maple syrup, and salt over medium heat. Stir just until the salt dissolves. No need to boil.
4. Pour the warm brine over the onions. Push them down so they’re fully submerged.
5. Let them sit at room temp for 30 minutes. They will start to turn bright pink.
6. Store in the fridge. They get better with time but are good to go in an hour.
