Ground Chicken Lettuce Wraps

A quick weeknight dinner that’s fresh, flavorful, and ready in 20 minutes.

Ingredients

1 lb ground chicken

1 tbsp ghee or olive oil

1 small onion, finely diced

3 large cloves garlic, minced

1 tbsp fresh ginger, grated

2 tbsp coconut aminos

1 tbsp rice vinegar

1 tsp sesame oil

1 cup shredded carrots

Butter lettuce or romaine leaves, for serving

Instructions

1. Heat ghee or oil in a large skillet over medium heat.

2. Add the onion and sauté for 3–4 minutes, until softened.

3. Add garlic and ginger, and cook for 30 seconds until fragrant.

4. Add the ground chicken and cook until browned, breaking it up as it cooks—about 5–7 minutes.

5. Stir in coconut aminos, rice vinegar, and sesame oil. Cook another 2–3 minutes to let the flavors come together.

6. Stir in shredded carrots and cook just until slightly softened, about 1 minute.

7. Spoon the chicken mixture into lettuce leaves and serve.

Optional toppings: Extra shredded carrots, avocado slices, chopped green onions, fresh lime juice, crushed peanuts or cashews, chili flakes.
