Coconut Red Curry

Enjoy this comforting and flavorful coconut red curry that's perfect for serving with rice, vegetables and your choice of protein.

Ingredients

2 tbsp coconut oil

1 large onion, finely chopped

3 large garlic cloves, finely chopped

1 tbsp fresh grated ginger

4-5 tbsp Thai red curry paste

1 tbsp fish sauce (could sub soy sauce)

2 tbsp coconut aminos

1 tbsp honey

2 cans coconut milk

3 cups bone broth (or any broth of choice - chicken broth, vegetable broth, etc.)

Juice from 1 lime

Sea salt

Instructions

1. In a large pot over medium heat, heat the coconut oil. Add the onion and cook 5 minutes or until fragrant. Add in the garlic and ginger.

2. Stir in the curry paste, coconut aminos and fish sauce. Stir for about 1 minute.

3. Add in coconut milk, bone broth and honey. Stir to combine and bring the mixture to a simmer. Remove from heat and add in the lime juice.

4. Add sea salt as needed.

5. Serve with rice and your choice of sautéed vegetables and protein. Enjoy!
