Apple Carrot Oat Bars

Here's a simple recipe for an easy toddler snack! These homemade oat bars are made with fruits and veggies and are a nutritious option for a grab and go snack.

Ingredients

2 cups oats

2 apples

1/4 cup hemp seeds

2 carrots

6 pitted dates

1 tsp cinnamon

1/2 tsp sea salt

Instructions

1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.

2. Soak the pitted dates in hot water for a couple of minutes.

3. Chop the carrots and apples into large chunks, leaving the apple skin on.

4. In a food processor, combine the oats, hemp seeds, chopped dates, chopped apples + carrots , cinnamon and sea salt. Mix until well combined.

5. Transfer the mixture to the lined baking dish, pressing it down firmly to create an even layer.

6. Bake in the preheated oven for about 30 minutes or until the edges turn golden brown.

7. Allow the bars to cool completely in the baking dish. Once cooled, use a sharp knife to cut into bars or squares.

- Store the oat bars in an airtight container at room temperature for a few days or refrigerate for longer freshness.
